Xanthan Gum is a polysaccharide derived from the fermentation of carbohydrates, particularly glucose or corn syrup. It is used as a viscosity controller, gelling agent, emulsifier, and skin-conditioning agent. It is a large molecule, with an average molecular weight exceeding a million Daltons. It readily dissolves in water and can provide a high degree of viscosity at low concentrations. It is typically used below 1% - predominately around 0.1-0.5%. It is an all-natural chain of sugar molecules and is one of the most popular gums used in food and cosmetics.
